1/2 cup coconut oil
1/2 cup smooth peanut butter, unsalted & unsweetened, not crunchy
3 tbsp agave nectar
1/4 cup cocoa powder, unsweetened
2 scoops IQ'ed Smart NutritionTM
1 + 1/2 cups puffed brown rice
In a medium saucepan melt coconut oil on low heat. Add peanut butter and agave nectar and whisk together until all ingredients have melted and are combined. Add cocoa powder, whisk just enough to incorporate it with other ingredients and remove from heat.
Add IQ'ed Smart NutritionTM and whisk again until the mixture is smooth. Add puffed brown rice and mix gently with a spatula until well combined. The mixture should be scoopable with a spoon and ingredients should stick together in order to form cookies. Proceed to next step immediately.
Immediately place full tablespoons of mixture in a shape of round/oval cookies leaving some space in between on a baking sheet lined with parchment or wax paper. Refrigerate for an hour or freeze for at least 30 minutes for cookies to set.
Storage: Store in an airtight container in the fridge for up to 2 weeks or in the freezer section for up to 2 months.
